Subtly balanced
The marriage of gastronomy and wine is a subtle exercise. Chef Deo Jugurnauth and sommelier Rohit Mungla have joined forces to perfect the menu. There’s not a false note to be found in the choice of ingredients or wines, and even less in the Fabulous Group’s live music! At first glance, the number of dishes on the menu seems impressive: five plates follow one another at the table, with as many wines to savor. But in the end, the quantities are skilfully proportioned and give no sensation of excess. It’s all a question of balance, and this upscale concept has been perfectly thought through.
A divine Italian menu
Oxtail ravioli confit in a lemongrass-flavored red bell pepper broth; risotto and roasted lobster with shellfish jus; entrecôte à la plancha with truffle potato, garden vegetables and Périgueux sauce; a selection of cheeses aged by Hervé Mons, Meilleur Ouvrier de France 2002, and pistachio tiramisu. Excellent rosé, red and white wines are the perfect accompaniment to all these dishes. The ambience is relaxed, with a sea view and a tasteful, softly-lit decor. The live cooking brings a great deal of interaction with customers. In short, this meal is worthy of the finest addresses!
