He’s 27, with a smile to die for and talent to spare! In the kitchens of Gin’Ja – the Heritage Le Telfair’s Japanese restaurant – new chef Pawan Singh masters and sublimates Japanese fusion cuisine, or the art of teppanyaki!

Teppanyaki cuisine

A contraction of teppan (iron plate) and yaki (grilled), this Japanese gastronomic tradition is indeed the art of “grilling on a plate”! At Gin’Ja – which is also the name of a village in the Land of the Rising Sun – the brigade has perfected its skills and now possesses an in-depth knowledge of this cooking method. Contrary to popular belief, it’s not a matter of throwing your steak on the grill and watching it cook! Pawan, the Teppanyaki chef, excels in the precision of this flamboyant culinary art. The chef’s creativity, technical skill and passion give each dish its own unique flavor.

Towards a cultural merger

“Japan has always been famous for its unique approach to gastronomy, combining a world of exotic ingredients and aromatic spices to create truly inspiring dishes.” Pawan knows “that by incorporating elements of local culture and traditional flavors into Japanese dishes, the restaurant can create a unique fusion that will appeal to Mauritians.” Sensitive to the feast for the eye and the palate, they will also be sensitive to the introduction to teppanyaki, through workshops and cooking classes.
