Jennifer Moreau transforms vegan cooking into a modern, joyful experience. At Shlomo in Grand Baie, she innovates by adapting plants to different sauces and recipes, served in a setting that promotes a cool attitude. ZA
“I can wake up one morning and decide to create a new recipe to surprise my customers,” explains Jennifer. Burgers, nuggets, burritos, tacos, salads : the range is as surprising as it is varied. By combining plants, wheat, spices and other strictly vegan components, Jennifer recreates modern and classic menus. “We reconstitute certain meats using plants, so that those who come are not disoriented from fast-food. Here, they can be sure of having access to healthy cuisine.”
In 2020, she launched the concept because she had been challenged by serious illnesses that were striking some children prematurely. “The research I undertook indicated that it was the products in our diet that were responsible for this situation.”
Meeting her husband Akaziyah Ben, who is of Jewish descent, led her to vegan culture. The couple’s travels helped expose Jennifer to other culinary horizons. “I drew inspiration from Israelite, Egyptian, Turkish and Mauritian cultures to create Shlomo’s menu.”
Plants, cushions, varnished and rustic wood make up the decor of this northern bistro. An environment in keeping with the concept put forward. “Our clientele, which is far from being exclusively vegan, is made up of people who like good, healthy food, where proteins are present. Here, we don’t demand propriety, so people can get to know each other and chat. That’s what makes for a great dining experience.
